Have a beef with butchers? You aren’t alone

Here’s the deal. Cattle are bigger than they used to be, High Plains Journal reports. Our friends from the Corridor Business Journal passed along the story, which notes a pre-steak-display animal weighed 1,363 pounds in 2016, a gain of 366 over 1975. The beefier bovine means butchers cut thinner sirloins and other steaks to keep them at the same weight. And, wouldn’t you know it, meat-eaters responded by saying, “Hey what the heck are you doing?” We know this because of an Oklahoma State University survey that found “near unanimous dislike” for thin, measly steaks that don’t immediately inspire awe. Trying to rob us of thick steaks is likely to cost the industry $8.6 billion in sales lost to people who prefer thicker cuts, the study found.
