Jethro’s BBQ n’ LakeHouse, located in Ankeny’s Prairie Trail development, opened last week and is now serving up barbecue and Cajun food. The restaurant’s ribbon cutting will take place today at 4:30 p.m. The 7,000 square-foot barbecue joint is the fourth Jethro’s location in the area and will employ 120 people, said owner Bruce Gerleman. The restaurant will feature the same menu as the original location with one addition, Wisconsin walleye, which he was surprised to find was the most popular dish during opening weekend. Gerleman said that opening weekend brought another surprise: The Iowa State University basketball team and head coach Fred Hoiberg stopped in to celebrate a victory on Dec. 15.
